Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Cut the steak into thin strips, 1‑1½ inches wide. Roll them up and dip in a mixture of flour, salt, and pepper.

  2. Place a layer of the steak at the bottom of a pie dish.

  3. Slice the kidney thinly, removing all fat. Season and layer it over the steak.

  4. Continue layering until the dish is full, raising the filling in the center.

Assemble and bake

  1. Half fill the dish with stock. Wet the edges of the dish and cover with strips of pastry.

  2. Moisten the pastry and cover with more pastry. Cut a hole in the center and decorate the top with pastry leaves.

  3. Brush the top with beaten egg. Bake in a 400°F (200°C) oven for 10 minutes, then reduce to 350°F (175°C) and bake for about 1½ hours.

Serve

  1. When cooked, fill the pie with well‑seasoned gravy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Steak
Forms the main meaty filling, becoming tender through long, slow baking.
Kidney
Adds a rich, deep meaty flavor to the filling.
Flour
Coats the meat and thickens the stock into a gravy-like sauce.
Short or flaky pastry
Forms the crisp, rich crust that encloses the filling.
Egg
Brushed on top, it promotes even browning and a glossy finish.

The step that matters

Bake at the two-stage temperature. Starting hot sets and browns the pastry quickly, then the lower heat lets the meat tenderize without drying or burning the crust.
