What each ingredient does

Oatmeal
Forms the body of the porridge as its starch thickens in boiling water.
Water
Hydrates the oats so they soften and swell into a porridge.

The step that matters

Sprinkling the oatmeal into boiling water while stirring. Adding oats gradually while stirring keeps them from clumping into lumps. Stirring also distributes the starch so the porridge thickens evenly.
