What each ingredient does

Carrots
Make up the main bulk of the dish and supply its natural sweetness as they soften.

The step that matters

Boil for about 1 hour. Carrots soften gradually as their starch and cell walls break down in hot water. Checking for tenderness near the end helps avoid under- or overcooked carrots that are too firm or turn mushy.
