Stewed Potatoes

Ingredients

Directions

  1. Wash and peel the potatoes, then place them in cold water.

  2. Cut the potatoes into small squares and transfer them to another bowl of cold water.

  3. Drain the potatoes and place them in an iron frying pan.

  4. Add enough boiling water to cover the potatoes, sprinkle with salt, and bring to a boil.

  5. In a small bowl, rub together the butter and flour.

  6. Wash and finely chop the parsley.

  7. When the potatoes are nearly soft, drain the water and add enough milk to cover them.

  8. Once the milk boils, stir in the butter and flour mixture.

  9. Let the mixture boil, stirring gently until the milk becomes creamy.

  10. Add the parsley just before serving and transfer the potatoes to a hot dish.
