To Roast Meat
Ingredients
Directions
Prepare the meat by seasoning it well with salt and then dredging it in flour.
Place the meat on a rack in a pan.
When the flour is brown, pour boiling water into the pan until it's about 1 inch deep.
Baste and dredge the meat frequently.
Once cooked, transfer the meat to a heated platter.
Skim the fat from the pan, place it on the stove, and bring it to a boil.
Stir in the thickening and boil again.
