Meat Escaloped

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Wash and peel the potatoes, then cut them into quarters and place in a saucepan to boil.

  2. Trim and chop the fresh meat very finely.

  3. Dredge the chopped meat in flour and seasoning.

  4. Add butter and hot water until the mixture is sufficiently moist.

  5. Transfer the meat mixture to a vegetable dish.

  6. Mash and season the potatoes as you would for mashed potatoes.

  7. Spread the mashed potatoes smoothly over the meat.

  8. Dot the top with butter.

  9. Cut across the top to prevent the crust from binding.

  10. Place in a 400°F (200°C) oven to brown.
