Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body, acidity and flavour of the soup.
Butter
Adds richness and fat, giving the soup a smoother mouthfeel.
Flour
Rubbed with butter and stirred in, it thickens the soup slightly.

The step that matters

Gradually stir in the reserved cup of cold tomatoes once the mixture boils. Adding cold tomatoes gradually to a boiling mixture helps prevent it from cooling sharply and keeps the flour-thickened base smooth rather than lumpy.

Swap the tomato

How well each one fits the dish's main ingredients (butter, flour):

  1. Shallotfits better
  2. Leekfits better
  3. Arrowrootfits better
  4. Tomatothe original

Fit is the average pairing score against butter, flour. Candidates are from the same food group and used in at least 100 recipes.
