Almond Cream Cake

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the cake layers

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg whites until stiff peaks form.

  3. Sift the powdered sugar, flour, and cream of tartar into the egg whites, then gently fold the sifted mixture into the egg whites.

  4. Pour the batter into jelly pans and bake until golden.

Make the almond cream filling

  1. Heat the sweet cream in a saucepan.

  2. Dissolve the corn starch in a little milk, then beat in the egg yolks and powdered sugar.

  3. Once the cream is boiling, stir in the egg mixture and cook until thickened.

  4. Blanch and chop the almonds, then stir them into the cream.

Assemble and garnish

  1. Assemble the cake layers with the cream filling while the icing is still soft, and garnish with split almonds.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into stiff peaks to give the batter its light, airy structure.
Egg yolks
Thicken the cream filling as they cook and add richness.
Corn starch
Thickens the cream filling when heated with liquid.
Almonds
Add nutty flavor and texture to the cream filling.
Flour
Provides structure to the cake layers once baked.
Sweet cream
Forms the base of the filling, adding richness and moisture.

The step that matters

Folding the sifted mixture into the egg whites. Folding gently preserves the air whipped into the egg whites. Stirring or deflating the foam makes the layers dense and flat.

Swap the almond

How well each one fits the dish's main ingredients (egg, sugar, flour, cream, corn, milk, vanilla):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Hazelnutfits less well
  4. Pistachiofits less well

Fit is the average pairing score against egg, sugar, flour, cream, corn, milk, vanilla. Candidates are from the same food group and used in at least 100 recipes.
