Peach Custard

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Place the halved peaches in a baking dish and sprinkle with powdered sugar.

Bake and finish

  1. Pour the custard over the peaches and bake for 20 minutes.

  2. Spread the beaten egg whites over the top, sweetening to taste.

  3. Return to the oven until the top is light brown.

  4. Serve warm with a rich sauce or cold with sweetened cream.

What each ingredient does

Peaches
Provide the fruit base and fresh, sweet flavour that the custard covers.
Egg whites
Beaten whites set and brown on top, giving a light, airy topping.
Custard
Forms the creamy, set layer that bakes around the peaches.
Powdered sugar
Dissolves quickly into the fruit, adding sweetness and helping it caramelise lightly.

The step that matters

Spreading the egg whites and returning to the oven. Beaten egg whites must be spread over the top so they seal the surface and then brown evenly. Watch them closely: egg white proteins set and colour quickly, so over-baking can make the topping dry, tough, or overly dark.

Swap the peach

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
