What each ingredient does

Plums
Provide the fruit that is cooked down into the jam.
Sugar
Sweetens the fruit and, as a thick syrup, draws moisture out to preserve it.

The step that matters

Repeating the syrup drain and boil over three to four days. Sugar syrup must be reboiled and poured back repeatedly so the fruit gradually absorbs sugar. Skipping rounds leaves the plums under-sweetened and less well preserved, while boiling the syrup to a thick consistency concentrates the sugar enough to inhibit spoilage.

Swap the plum

How well each one fits the dish's main ingredients (sugar, syrup):

  1. Vanillafits better
  2. Raisinfits better
  3. Pearfits better
  4. Plumthe original

Fit is the average pairing score against sugar, syrup. Candidates are from the same food group and used in at least 100 recipes.
