What each ingredient does

Shelled peas
Form the main body of the soup and give it its green flavour and thickness when mashed.
Butter
Rubbed into flour, it forms a roux-style paste that thickens the soup and adds richness.
Flour
Combines with butter to thicken the liquid as it is stirred in, giving the soup body.
Lettuce
Adds soft body and a mild sweetness as it cooks down into the soup.

The step that matters

Thicken with butter rubbed into flour. Flour lumps easily if added straight to hot liquid. Rubbing it into butter first coats the starch grains so they disperse evenly and thicken smoothly.

Swap the peas

How well each one fits the dish's main ingredients (lettuce, butter, flour, pepper, bread):

  1. Chestnutfits better
  2. Lentilsfits better
  3. Almondfits better

Fit is the average pairing score against lettuce, butter, flour, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
