Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Remove all bones from the fish and chop it finely.

  2. Butter a baking dish and sprinkle the bottom with parsley and shallots.

  3. Layer half of the fish in the dish, seasoning with salt, pepper, nutmeg, bits of butter, and slices of hard boiled eggs.

  4. Add the remaining fish, more seasoning, butter, and eggs.

  5. Pour in enough white sauce and vinegar or wine to fill the dish.

  6. Cover with pastry, making a hole in the center.

  7. Bake in a 350°F (175°C) oven for 1.5 hours.
