What each ingredient does

Tripe
Is the main ingredient; long simmering turns its tough muscle tissue tender.
Vinegar
Adds acidity that brightens the flavor and helps tenderize the tripe during cooking.

The step that matters

Drain and replace the water before cooking. Blanching the tripe in boiling water and then discarding that water removes impurities and strong odors, giving a cleaner flavor in the finished dish.

Swap the onion

How well each one fits the dish's main ingredients (pepper, clove, vinegar):

  1. Capsicumfits better
  2. Mustardfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against pepper, clove, vinegar. Candidates are from the same food group and used in at least 100 recipes.
