The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef suet
Provides fat that keeps the pastry tender and moist as it cooks.
All-purpose flour
Forms the gluten structure that holds the pastry together during boiling.
Raspberry or blackberry jam
Adds sweetness and fruity flavor that soaks slightly into the rolled pastry.

The step that matters

Wrapping the pudding in the cloth. If the cloth is not floured and the pudding is wrapped loosely, the pastry can stick to the cloth or leak jam into the water. A snug, well-sealed wrap keeps the roll intact and cooking evenly.

Swap the raspberry

How well each one fits the dish's main ingredients (beef, flour):

  1. Raisinfits better
  2. Avocadofits better
  3. Figfits better
  4. Raspberrythe original

Fit is the average pairing score against beef, flour. Candidates are from the same food group and used in at least 100 recipes.
