What each ingredient does

Canned peaches
Provide the main fruit flavor and most of the pudding's liquid.
Gelatine
Sets the mixture into a firm, sliceable gel as it cools.
Heavy cream
Whipped air and fat give the pudding a light, creamy texture.
Sugar
Adds sweetness and balances the tartness of the peaches.

The step that matters

Stop chilling when the mixture just begins to thicken. Gelatin sets as it cools, so if the mixture firms too far before the cream is folded in, the cream will not blend evenly and the pudding can turn lumpy and dense.

Swap the peach

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
