Baked Dasheens
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Preheat the oven to 350°F (175°C).
Clean the dasheens by removing loose fiber with a brush or cloth.
For larger dasheens, parboil in nearly boiling water for 10 to 20 minutes.
Place the dasheens in the oven and bake until tender.
Serve immediately, seasoned with salt and plenty of butter. Add pepper if desired.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
