Friar's Omelet

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Butter a charlotte mold generously.

  3. Crumble the bread finely and press it onto the sides of the mold to create a coating.

  4. Prepare a mixture of apples and fill the mold with it.

  5. Bake until the top is a handsome reddish brown. Let cool before serving.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
