The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  2. Add cream, eggs, sherry, lemon juice, and grated rind. Stir well to combine.

Bake and serve

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Plantain pulp
Forms the body of the custard and provides its main flavor and moisture.
Eggs
Set during baking to give the custard its firm, sliceable structure.
Butter
Adds richness and a smooth, tender texture to the custard.
Cream
Adds richness and moisture, softening the set custard.
Sugar
Sweetens the custard and helps it brown lightly at the surface.

The step that matters

Baking until set. Eggs set as they heat, so underbaking leaves the custard runny while overbaking can make it dry and grainy. Check that the centre is just firm before removing it from the oven.
