Ingredients

Directions

The book says “a slow oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Brush cake moulds with melted butter and coat with powdered sugar, then remove excess.

Make the batter

  1. In a large bowl, beat the sugar and eggs with a wire whisk for 30 minutes.

  2. Gently fold in the flour, then add the vanilla extract and brandy.

  3. Once the flour is fully incorporated, pour the batter into the prepared moulds.

Bake

  1. Bake for about 1 hour or until golden brown and a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten with sugar to trap air, giving the batter lift and a light, airy crumb.
Flour
Provides the structure that sets as the cake bakes, holding its shape.
Granulated sugar
Whisked with the eggs for volume and contributes sweetness and golden browning.
Brandy
Adds aroma and flavour to the batter.

The step that matters

Folding in the flour. Overmixing once flour is added develops gluten and toughens the cake, so fold gently and stop as soon as the flour is fully incorporated.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, egg, flour, brandy, butter):

  1. Raisinfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Apricotfits less well

Fit is the average pairing score against sugar, egg, flour, brandy, butter. Candidates are from the same food group and used in at least 100 recipes.
