Why it works: Peach and nutmeg match in chemistry and in kitchens. They rank in the top 10% of all ingredient pairs, and cooks put them together in 342 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Line two shallow pudding pans with pie crust.

  3. Fill each pan with the peach halves, about 3 inches deep.

  4. Sprinkle ¾ cup sugar over the peaches and add ½ cup butter in pieces.

  5. Grate a little nutmeg over the top.

Bake and serve

  1. Bake for about 30 minutes, covering with paper if the fruit starts to blacken.

  2. Spread meringue over the peaches while still in the oven and bake until lightly browned.

  3. Serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Provide the fruit base and its juices, which soften and sweeten as they bake.
White sugar
Sweetens the fruit and helps draw out juice for a syrupy filling.
Unsalted butter
Adds richness and fat that carries flavor and gives a tender, silky texture.

The step that matters

Covering the fruit while baking. Peaches can darken and scorch in a hot oven as their sugars caramelize. Covering them with paper slows browning so the fruit cooks through without turning bitter.

Swap the nutmeg

How well each one fits the dish's main ingredients (peach, sugar, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits about as well
  4. Clovefits less well

Fit is the average pairing score against peach, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
