Virginia Granger Potato Bread

Ingredients

Directions

The book gives no oven temperature. The 350°F in the steps was added when the recipe was transcribed, as a starting point.

  1. Boil the potatoes until just tender, then dry them briefly on the fire.

  2. Peel the hot potatoes and mash them as finely as possible.

  3. Mix the pearl ash with new yeast and add to the mashed potatoes.

  4. Incorporate the rye meal or flour until well combined; do not add water.

  5. Let the dough rest for 1.5 to 2 hours before baking.

  6. Bake in a moderate oven (350°F / 175°C) until done, which will take less time than regular wheat bread.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
