Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the sauce as they set with gentle heat, giving it a smooth, custard-like body.
Sherry
Adds wine flavour and aroma to the sauce.
Sugar
Adds sweetness that balances the wine and the tartness of the lemon peel.

The step that matters

Remove from heat before it boils. Egg yolk proteins set and scramble when overheated, so the sauce turns grainy or curdled if it boils. Stirring constantly and pulling it off the heat as it thickens keeps it smooth.

Swap the lemon

How well each one fits the dish's main ingredients (sherry, egg, sugar):

  2. Figfits better
  3. Pineapplefits better
