Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crusts
Starch that thickens the broth as it simmers, giving the soup body.
Crayfish shells and claws
Release flavour and colour into the broth during the long boil.
Flounders, eels, or gudgeons
Fish that add savoury depth and gelatin to the broth as they cook.
Lobster spawn
Adds richness and colour to the soup when pounded in.

The step that matters

Simmer gently after adding the crayfish. Boiling hard toughens the delicate crayfish meat and can make the soup cloudy; gentle heat warms the flesh through evenly.

Swap the allspice

How well each one fits the dish's main ingredients (onion, carrot, parsley, crayfish, bread, lobster):

  1. Celeryfits better
  2. Thymefits better
  3. Capersfits better
  4. Allspicethe original

Fit is the average pairing score against onion, carrot, parsley, crayfish, bread, lobster. Candidates are from the same food group and used in at least 100 recipes.
