Lemon Pies

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. Soak the pounded cracker in the milk.

  2. Stir in the yolks and beaten whites of the eggs, sugar, lemon rind, and lemon juice.

  3. Bake in a deep pie plate lined with plain paste at 350°F (175°C) for 30 minutes.

Top and finish

  1. Beat the egg white to a froth, then stir in the sugar.

  2. Set the frothy mixture in the oven until light brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base of the custard, giving a soft, moist set.
Egg yolks
Thicken the custard as they set, giving it a rich, smooth texture.
Egg whites
Set with the filling and whip into a light froth for the topping.
Sugar
Sweetens the pie and helps the egg white topping hold and brown.
Lemon juice
Adds acidity that brightens the flavour and balances the sugar.
Lemon rind
Adds aromatic lemon oils that give a strong citrus scent and flavour.

The step that matters

Browning the frothy topping. The beaten egg white with sugar browns quickly in the oven. Stop once it is light brown, because overbaking can toughen the foam and make it weep.
