Why it works: Cucumber and onion match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 6,050 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Form the main body of the dish, softening as they stew and reducing in liquid.
Vinegar
Adds acidity that sharpens the flavour of the stewed cucumbers.
Onion
Adds savoury aroma and sweetness as it cooks into the liquid.
Fresh butter
Adds fat and richness when the cucumbers are fried instead of simmered.
Strong sauce (cullis)
Adds concentrated savoury flavour and body to the stew.

The step that matters

Simmering until the liquid is reduced. Cooking over low heat lets excess liquid evaporate gradually, concentrating flavour and keeping the cucumbers from turning watery. Too much heat can break them down unevenly before they are nearly done.

Swap the cucumber

How well each one fits the dish's main ingredients (vinegar, onion, butter, sauce):

  1. Mustardfits better
  2. Shallotfits better
  3. Chivefits about as well
