Eel Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Skin and clean the eels, then cut them into 2-inch pieces.

  2. Mix the eels with chopped parsley, eschalots, grated nutmeg, pepper, coarse sea salt, and lemon juice. Let it sit for 5 minutes.

  3. Place a layer of light forcemeat at the bottom of a deep dish.

  4. Arrange the eels over the forcemeat and cover with puff pastry.

  5. Bake in a 400°F (200°C) oven until golden brown.

  6. Serve with béchamel sauce or coulis.
