Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the mixture

  1. Pound the meat of the boiled lobsters with raw ham, beef marrow, egg yolks, soaked bread, beaten mace, cayenne pepper, and salt.

  2. Color the mixture with lobster spawn.

Assemble and bake

  1. Line a mold with thin slices of bacon and press the mixture into it.

  2. Cover with bacon strips and the mold cover.

  3. Bake at 350°F (175°C) for 1.5 hours and let it cool.

Serve

  1. Turn it out of the mold, remove the fat, and serve with savory jelly.

What each ingredient does

Boiled lobster meat
Forms the main body of the casserole and gives its flavor.
Egg yolks
Bind the mixture and help it set firm when baked.
Beef marrow
Adds richness and moisture, keeping the mixture from drying out.
Soaked bread
Soaks up cream and keeps the mixture tender and moist.
Lean raw ham
Adds savory depth and a firmer, meatier texture.
Lobster spawn
Colors the mixture and adds a rich, concentrated seafood flavor.

The step that matters

Baking and cooling in the mold. Egg yolks set as the mixture heats, so baking too hot or too long can make the texture dense or grainy. Letting it cool fully in the mold helps it hold its shape when turned out.

Swap the mace

How well each one fits the dish's main ingredients (meat, lobster, ham, beef, egg, bread, cream):

  1. Nutmegfits better
