The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Clove and sugar barely smell alike, yet cooks put them together in 17,182 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cloves
Provide the main aromatic flavour that the syrup carries.
Loaf sugar
Sweetens the liquid and thickens it into a syrup as it simmers.
Egg whites
Bind impurities during heating so they can be removed, clarifying the syrup.

The step that matters

Adding the egg whites to clarify. Egg white proteins coagulate as the mixture heats and trap cloudy particles. Whisking them in fully and letting the mixture come up to heat lets the particles collect, leaving a clearer syrup.

Swap the clove

How well each one fits the dish's main ingredients (sugar, egg):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerfits better
  4. Clovethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
