What each ingredient does

Tripe
Forms the main body of the dish, cooked until tender in gentle simmering liquid.
Onions
Become sweet and soft as they boil, adding mild flavour to the dish.
Milk
Mellows the flavour and adds richness to the cooking liquid.
Butter
Adds richness and fat to the sauce served alongside.

The step that matters

Boiling the tripe gently. Vigorous boiling toughens the tripe and can make it rubbery, while a gentle simmer lets its connective tissue soften slowly and evenly.
