What each ingredient does

Vermicelli
Thin pasta that softens in the hot stock and gives the soup its body.
Bone stock
Gelatin-rich liquid that gives the soup its savory base and body.
Saffron
Adds the bright straw color and a distinctive floral aroma.
Onion or leek
Flavors the stock with aromatic sweetness while it simmers.

The step that matters

Boil for 30 minutes. Boiling the stock with saffron, aromatics and peppercorns extracts flavor. Boiling hard can cloud the stock, so keep it at a steady simmer-like boil until the flavors are drawn out.
