To Boil Potatoes

Ingredients

Directions

  1. Peel the potatoes thinly and wash them well in cold water without soaking.

  2. Place the potatoes in a saucepan designated for vegetables and cover them with cold water.

  3. Add a pinch of coarse sea salt and bring to a boil.

  4. Reduce heat and simmer gently for about 20 minutes.

  5. Test with a fork; if soft, strain off the water.

  6. Toss the potatoes in the saucepan over low heat until dry.

  7. If potatoes begin to break, pour off most of the water, leaving about 1 inch in the bottom.

  8. Cook slowly in the remaining water, then strain and dry.

  9. For troublesome potatoes, steam them for 1 to 1.5 hours, depending on the water quantity.
