Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Savoury Potatoes

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the potatoes

  1. Scrub the potatoes.

  2. Bake them at 400°F (200°C) until tender.

  3. Cut off the end of each potato.

  4. Scoop out the insides.

Make the filling

  1. Grate the cheese.

  2. Mix the cheese with the potato insides, egg yolk, and seasoning.

  3. Whip the egg white until stiff.

  4. Gently fold the whipped egg white into the potato mixture.

Bake and serve

  1. Fill the potatoes with the mixture.

  2. Place the stuffed potatoes on a baking sheet.

  3. Bake for about 20 minutes.

  4. Garnish with parsley and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy base that is scooped out, mashed with the filling, and holds the stuffing.
Egg
The yolk enriches and binds the filling, while the whipped white adds air for a lighter texture.
Cheese
Adds richness and savory flavor to the filling and helps it brown in the oven.
Milk
Adds moisture so the potato filling stays soft and spreadable.

The step that matters

Fold in the whipped egg white gently. Whipped egg white traps air that gives the filling its lightness. Vigorous stirring deflates the foam, leaving a dense filling instead of a light, puffed one.

Swap the parsley

How well each one fits the dish's main ingredients (potato, cheese, milk, egg, pepper):

  1. Dillfits about as well
  2. Parsleythe original
  3. Nutmegfits about as well
  4. Thymefits about as well

Fit is the average pairing score against potato, cheese, milk, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
