To Boil Rice

Ingredients

Directions

  1. Wash the rice well in two or three waters.

  2. In a large saucepan, bring water to a boil and season with salt.

  3. Add the rice and boil quickly for 5 to 6 minutes.

  4. Test a grain; if it feels soft, it's done. If not, boil for another minute.

  5. Strain off the water and pour clean hot water over the rice to separate the grains.

  6. If serving immediately, return the rice to the saucepan and toss over the heat until dry.

  7. If not serving right away, spread the rice on a sieve or dish, cover with a cloth, and dry on the stove or in the oven with the door open.
