Tapioca Meringue

Oven, in the book's wordsA very cool oven

Ingredients

Directions

The book says “a very cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash the tapioca in cold water, strain, and place it in a pie dish.

  2. Chop the suet finely and mix it with the sugar and flavouring.

  3. Pour the milk over the mixture and stir well.

Bake

  1. Bake in a cool oven at 300°F (150°C) for two hours.

Top and serve

  1. Whip the egg whites to stiff peaks, flavour them, and spread on top of the pudding.

  2. Sprinkle with sugar and return to the oven until set.

  3. Serve cold, optionally adding broken macaroons or raspberry jam on top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Its starch swells in the warm milk and thickens the pudding as it bakes.
Milk
Provides the liquid that the tapioca absorbs, forming the soft custard base.
Egg whites
Whipped into a foam that sets in the oven to form a light meringue topping.
Sugar
Adds sweetness and helps the meringue topping stay stable and brown lightly.
Beef suet
Adds fat that gives the pudding richness and a softer, rounder mouthfeel.

The step that matters

Whipping the egg whites to stiff peaks. Egg white proteins must be beaten until they hold firm peaks, trapping air. Under-whipped whites collapse and weep in the oven, while the foam needs to be spread over the pudding so it seals the surface and sets evenly.
