Sweet Potato Meringue

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the base

  1. Boil the sweet potatoes until tender, then peel and mash them.

  2. Add sugar, milk, egg yolks, and salt to the mashed potatoes.

  3. Beat the mixture for 5 minutes until it is very light and creamy.

Bake and top

  1. Pile the mixture lightly into a dish and bake at 350°F (175°C) for 30 minutes.

  2. Remove from the oven and add the beaten egg whites on top.

  3. Return to the oven and bake until browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet potatoes
Provide the bulk and soft, moist body of the dish.
Eggs
Egg yolks enrich the base, while whites set and form the light meringue topping.
Milk
Adds moisture and softness to the mashed potato base.
Sugar
Sweetens the base and helps the meringue brown.

The step that matters

Adding the egg whites on top. Egg whites must be beaten to stiff, glossy peaks before being added; under-beaten whites will not hold their volume and the topping can collapse or weep in the oven.

Swap the sweet potato

How well each one fits the dish's main ingredients (egg, sugar, milk):

  1. Sweet potatothe original
