Jelly Roll

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, cream the eggs and sugar together.

  3. Add the baking powder, lemon rind, salt, and cold water; mix well.

  4. Pour the batter into a greased baking pan and bake until golden.

Fill and roll

  1. Once cooled, place the cake on a towel, spread jelly over it, and carefully roll it up in the towel.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped with sugar to trap air, giving the sponge its light, airy structure.
Sugar
Creams with the eggs and adds sweetness while helping the cake brown.
Baking powder
Releases gas during baking so the batter rises and lightens.
Jelly
Adds sweetness and moisture as the filling spread inside the rolled cake.

The step that matters

Rolling the cake while warm enough to bend. Once cooled, a sponge cake can crack when rolled. Rolling it in a towel while still pliable helps it bend without tearing, though the record says to roll once cooled, so follow that timing closely and roll gently.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
