Potato Soup

Ingredients

Directions

Prepare

  1. Peel and cut the potatoes and put them into a saucepan.

  2. Add 2 cups of water for each pound of potatoes.

  3. Add 1-2 onions and pepper and salt to taste.

Cook and serve

  1. Boil until the potatoes are tender.

  2. Rub the mixture through a sieve.

  3. Warm the soup again and serve.

Variations

  1. For a richer soup, use equal parts milk and water instead of water only.

  2. For added flavor, fry the onions in butter before adding them to the soup.

  3. If you dislike onions, chop some parsley finely and add it to the soup instead.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the body of the soup; cooking softens them and rubbing them through a sieve thickens it.
Onions
Add savory aroma and sweetness as they soften during boiling.
Butter
Adds richness and flavor when used to fry the onions before adding them.

The step that matters

Rub the mixture through a sieve. Sieving breaks down the cooked potatoes and onions into a smooth, even texture. Cooking them fully first makes them soft enough to pass through the sieve easily.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (potato, onion, pepper, butter):

  1. Garlicfits about as well
  2. Parsleythe original
  3. Thymefits about as well
  4. Celeryfits less well

Fit is the average pairing score against potato, onion, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
