Fifty Lunches

Ingredients

Directions

  1. Combine water and broth in a pot over low heat and bring to a boil, skimming off any scum.

  2. Add onions, salt, pepper, and herbs in a muslin bag. Simmer for 2 hours, then strain and set onions aside.

  3. Return broth to heat, add meat, reduce heat, and simmer gently until cooked. Strain broth and place meat on a plate.

  4. Mash cooked potatoes, adding enough broth to achieve a thick cream consistency. Stir in reserved onions.

  5. Heat the puree in a saucepan, add meat, and stir gently until hot.

  6. Serve meat on a hot dish, covered with the puree.
