Why it works: Syrup and gelatin match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 192 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Fifty Lunches

Ingredients

Directions

Make the rhubarb base

  1. Cut the rhubarb into pieces and simmer it in enough lemon-flavored syrup to cover.

  2. Once soft, puree the rhubarb and strain it from the juice.

  3. Add the dissolved gelatin to the juice and mix well.

Set and serve

  1. Combine the pulp with the whipped cream and mix until smooth.

  2. Fill a dozen wetted molds with the mixture and set them on ice until firm.

  3. Once set, turn them out onto a serving dish in a circle and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the main fruit flavor and, once pureed, the body of the dessert.
Dissolved gelatin
Sets the juice so the molded dessert holds its shape when turned out.
Whipped cream
Adds richness and a light, airy texture to the pulp.
Sugar
Sweetens the rhubarb and balances its tartness.

The step that matters

Combining the pulp with the whipped cream. Mixing until smooth keeps the cream evenly distributed. Overmixing can deflate the whipped cream and thin the mixture, so it may not set as light or firm.

Swap the lemon

How well each one fits the dish's main ingredients (rhubarb, syrup, gelatin, cream, sugar):

Fit is the average pairing score against rhubarb, syrup, gelatin, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
