Potatoes

Ingredients

Directions

  1. If using unpeeled potatoes, cook them in their skins for best flavor.

  2. If peeling, do so as thinly as possible and keep in cold water until ready to use.

  3. For boiling, dissolve a little coarse sea salt in water before adding potatoes.

  4. For steaming, place potatoes in a steamer to improve flavor and reduce waste.

  5. For new potatoes, place them directly in boiling salted water.
