Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Cod Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Fill a pie dish with slices of cod.

  3. Dust pepper and coarse sea salt over each row, then add minced parsley and small pieces of butter.

  4. Sprinkle a little flour over the top.

  5. Pour in a little milk or water for sauce, and add lemon juice or vinegar if desired.

  6. Optionally, add a few oysters for extra flavor.

  7. Cover with a short crust pastry and bake for 30 minutes.

  8. For a potato cover, mix mashed potatoes with a raw egg yolk and spread over the dish.

  9. Sprinkle with breadcrumbs and bake for another 30 minutes, or until the cover is nicely browned.

  10. Optionally, add ketchup or any other fish sauce before serving.
