What each ingredient does

Steak
Becomes tender and flavourful as it cooks slowly in the liquid.
Suet
Adds richness and fat that enriches the broth and gives the dumplings body.
Flour
Thickens the dumplings so they hold together while they cook.
Onions
Add sweetness and aroma to the broth as they soften during stewing.

The step that matters

Moistening the flour with boiling water. Adding boiling water to the flour gelatinises its starch and keeps the dumplings light rather than dense. Too little or cold water leaves them heavy and pasty.

Swap the onion

How well each one fits the dish's main ingredients (pepper, flour):

  1. Arrowrootfits better
  2. Okrafits better
