Grouse Pie
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat the oven to 350°F (175°C).
Clean and halve the grouse lengthways, removing the drumsticks and tucking in the legs.
Place a good steak at the bottom of a pie dish and add the grouse on top.
Season the grouse well and cover with a light pastry.
Add a little water to the dish and bake for 1.5 hours.
Fasten a few of the feet on the pastry cover and garnish with a small spray of heath before serving.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
