Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Forms flaky layers when rolled into the dough, creating separation as it melts and steam lifts the pastry.
Flour
Provides the structure that holds the dough together and the layers in place.
Egg yolk
Adds richness and helps bind the dough.
Cold water
Moistens the flour to form a dough without melting the butter.

The step that matters

Keeping the butter and dough cold. If the butter softens and blends into the dough, it will not form separate layers. Cold dough and cool hands keep the butter in distinct pieces that steam and lift the pastry as it bakes.
