Souffle Pudding.— Baked

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the base

  1. Pour boiling milk over rusks and let them soak briefly.

  2. Beat the egg yolks with sugar and lemon zest.

  3. Mash the soaked rusks until smooth and mix with the egg yolk mixture.

Fold and bake

  1. Whip the egg whites until stiff and gently fold them into the mixture.

  2. Bake in a preheated oven at 400°F (200°C) for 20 minutes.

What each ingredient does

Rusks
Soak up milk to form the soft, bready body of the pudding.
Egg yolks
Add richness and help bind the pudding as it sets.
Egg whites
Whipped to stiff peaks, they trap air and lift the pudding as it bakes.
Milk
Softens the rusks and adds moisture to the mixture.
Sugar
Sweetens the pudding and helps stabilise the beaten yolks.

The step that matters

Fold in the egg whites. Whipped whites give the soufflé-style rise, but overmixing deflates the air bubbles. Fold gently, just until no white streaks remain, so the pudding stays light when it bakes.
