Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the fruit body and natural pectin that helps the preserve thicken as it cooks.
Loaf sugar
Adds sweetness and draws water out of the apples, helping the fruit keep and turn glossy.
Ginger
Adds a warm, sharp aroma and spicy flavour that balances the sweetness of the sugar.

The step that matters

Boil the apples in the syrup until they are clear. Heat softens the apple pieces and lets the sugar syrup penetrate, making them translucent. Boiling too long can break the pieces down into mush, so watch for clarity rather than a fixed time.

Swap the apple

How well each one fits the dish's main ingredients (ginger, sugar):

  1. Lemonfits better
  2. Orangefits better
  3. Limefits better
  4. Applethe original

Fit is the average pairing score against ginger, sugar. Candidates are from the same food group and used in at least 100 recipes.
