Pickled Pork
Ingredients
Directions
Rub the pork pieces well with salt.
Place the pork in a pan, sprinkling salt between each piece.
As the salt melts, add more salt on top.
Cover the pan with a coarse cloth, place a board on top, and weigh it down to keep the pork submerged in brine.
Recipe from a historical cookbook (Internet Archive).
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
