What each ingredient does

Cucumbers
Provide the main body of the sauce and a fresh, mild flavour once cooked.
Butter
Adds fat for sautéing, helping the cucumbers brown and carrying flavour.
Brown gravy
Supplies savoury depth and liquid that thickens and coats the cucumbers as it simmers.

The step that matters

Drain the cucumber pieces well. Cucumbers are mostly water. Removing excess moisture before sautéing lets the pieces brown instead of steaming, and keeps the sauce from becoming watery when the gravy is added.
