Lemon Jelly
Ingredients
Directions
Prepare the lemon infusion
Peel 3 lemons and pour ½ pint of boiling water over the rind.
Let it infuse for 1 hour.
Make the jelly
In a lined saucepan, combine the sugar, isinglass, and 1 pint of water.
Boil for 20 minutes.
Strain the lemon juice and the infusion of the rind into the saucepan.
Bring to a boil and skim well.
Add the sherry.
Strain the mixture through a bag.
Set and serve
Pour the jelly into a mould that has been wetted or soaked in water.
If convenient, place the mould in ice until ready to serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Lemons
- Provide the juice and rind oil that give the jelly its sharp, fragrant flavour.
- Lump sugar
- Adds sweetness and balances the acidity of the lemon juice.
- Isinglass
- Gelatine-like protein that sets the liquid into a firm, wobbly jelly when cooled.
- Sherry
- Adds aroma and a warm, wine-like flavour to the finished jelly.
The step that matters
Skim well before adding the sherry. Boiling brings impurities and foam to the surface, and skimming removes them so the jelly is clear. Sherry is added afterwards so its aroma is not cooked off and its flavour stays fresh.
