Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Break the potatoes into small pieces.

  2. Put them on a perforated plate with the valve attached.

  3. Fill the space at the top of the tube with nicely mashed potatoes mixed with a little milk.

  4. Finish the surface in an ornamental manner.

  5. Bake until covered with a delicate brown crust, about 40 to 60 minutes.

  6. Serve immediately with a napkin folded around it.
